What’s for Dinner? Split Pea Soup

Granted I will probably be the only one to eat it, cause I know the kids won’t and my old man only eats half the time. That could be one reason he weighs 40 pounds less than I do. Anyway…..here’s my recipe today. The way I cook is that the recipe will change according to what I have on hand.
Split Pea Soup
1/2 onion, diced
3 ribs celery, diced
1 cup baby carrots, sliced
2 cloves garlic, minced
1 tsp dry thyme
salt and pepper
Sweat in large pot. Add…
1 pound package dry split peas
1 quart of Pacific brand french onion soup
1 quart of water
1 large bay leaf
2 cups ham, cubed
Bring to a boil and simmer until peas are tender, about 2 hours.
If it gets too thick, add more water.
This comfort food should go well with the Vice Presidencial debate tonight.
Maybe I’ll put some bread in the bread machine. I think I have just enough time for a speedy loaf.

The other day I got to thinking that maybe the key was to THINK about food a lot and maybe that way I would have the right stuff around and wouldn’t me frantically scarfing just any old thing down.
So, What did you have for dinner last night? I need some new recipes and ideas.

I have updated the whole blog. I spent over 3 hours this morning. What do you think?
Last night we had 3 teenage boys over. They stayed up most of the night playing various video games. They were so quiet, I never heard them. They didn’t get up until 10:30. My son taught them how to make ‘egg mcmuffins’, a hit with 13 year old boys.
Egg McMuffins at home
1 whole wheat english muffin, toasted
2 slices of canadian bacon
1 slice of american cheese
1 egg
Butter a round bowl, crack egg into bowl, add salt & pepper, beat well.
Microwave for 50 seconds.
Assemble-muffin, meat, egg, cheese, muffin top.
This is the best school morning breakfast. The kids can make it themselves and it sticks with them until lunch.
Well, anyway…Happy New Year.
Tonight the girls are over. Well, one girl. All the boys went home. Who knew tickling was so popular with boys…and kicking, slugging…what’s with all the touching and sqwealing like girls. Tonight should be quieter.
A whole night of Wii sports. Yea, a video game a mom can play.
